Peanut Butter
Ingredients
- 60g flour
- 40g powdered peanut butter
- 65g peanut butter protein powder
- 30g peanut butter
- 14g butter
- 2 eggs
- 1 egg white
- 4g vanilla extract
- 28g granulated Swerve
- 28g brown sugar Swerve
Method
- Combine dry ingredients in a bowl
- In a separate larger bowl add peanut butter and butter and microwave in ten second increments until both have melted
- Mix butter and peanut butter together
- Add eggs, egg white, vanilla, both Swerves to the bowl and mix until combined and has a smooth consistency
- Use a strainer to sift in the dry ingredients, mix and ensure the consistency is smooth before adding more of the dry ingredients
- Switch to a spatula when the mixture becomes too thick for the whisk to mix
- Using a spatula, push the dough onto the sides of the bowl and scrape it off into the middle; repeat three to five times
