Ingredients
- 3 whole eggs
- 2 egg yolks
- 325g 2% cottage cheese
- 40g all-purpose flour
- 97.2g vanilla whey protein (3 scoops)
- 672g light cream cheese
- 100g sugar
- 150g erythritol
- 4g salt
- 8g (imitation) vanilla extract
- 2 cups 2% milk
Method
Note: all ingredients need to be at room temperature
- Preheat oven to 475°
- Add eggs and yolks to bowl
- Use an immersion blender to blend cottage cheese until smooth as butter
- Add flour and whey protein to a different bowl and whisk together
- Into a large bowl add:
- Cottage cheese
- Cream cheese
- Sugar
- Erythritol
- Salt
- Vanilla
