Ingredients
- 1/3 cup olive oil
- 1/2 cup orange juice
- 1/4 cup lime juice
- 1 small yellow onion, chopped
- 6 cloves garlic, minced
- 2 ounces achiote paste
- 1 tablespoon each:
- Ground coriander
- Ground cumin
- Kosher salt
- 2 teaspoons each:
- Smoked paprika
- Dried oregano
- 1 teaspoon each:
- Pepper
- Ground chipotle chili pepper
Method
- Mix all ingredients for the marinade together in a large bowl or plastic bag.
- Add the chicken and ensure that every piece is covered evenly.
- Marinate in fridge for 4 to 24 hours.
- Let chicken sit at room temperature for 20-30 minutes before cooking.
