Ingredients
- 500mL milk, 2-3%
- 50 grams fresh yeast
- 2 eggs
- 175mL sugar
- 1.5 teaspoons salt
- 3 teaspoons cardamom, brown, ground
- 200 grams butter
- 1 kg all-purpose flour
Method
- Dissolve yeast in lukewarm milk.
- Combine the yeast mixture with eggs, sugar, salt and cardamom.
- Gradually, 1 cup at a time, add about two thirds of the flour and knead.
- Add butter and knead until well combined.
- Continue to knead the dough, and gradually add just enough flour so the dough comes clean off the sides of the bowl and doesn't stick to your hand.
- Shape into a ball and cover with a clean kitchen towel. Let the dough rise in a warm, draft-free place for about 1 hour, or until it's double in size.
- Overworking the dough or adding too much flour will result hard buns instead of soft and firm.
